Black Tea
Black tea is a variety that is actually made from the same plant (Camellia sinensis) as White, Green and Oolong varieties.
Black tea is generally stronger in flavor and contains more caffeine than the less oxidized teas. It is this oxidation that makes black tea what it is.
Two main varieties of species are used, the small-leaved Chinese variety plant (C. sinensis subsp. sinensis), also used for green and white teas, and the large-leaved Assamese plant (C. sinensis subsp. assamica), which was used traditionally only in black tea varieties.
In Chinese and related languages, black tea is called crimson tea for the color of the liquid tea itself. The name "black tea" is due to the color of the oxidized leaves which are achieved through fermentation.
Unlike un-oxidized teas such as green tea, black tea has an extended shelf life and was traditionally shipped in large bricks.
